pan fried catfish, fresh cut fries, steamed broccoli...knocked it out in an hour including prep, pops and kids are actually eating it so i am happy...i gotta have a few Heinekens before i dine, i don't like eating what i just cooked... but i did taste and it's delish

just made a mini-pizza with a corn/jalapeno flatbread for the base, crushed tomatoes and green salsa, sliced black olives and cheddar -- put it under the broiler for four minutes (no patience for baking

mehh whole wheat spaghetti with vegetarian sauce (tomatoes,red lentils,grated carrots garlic ect) with cool glass of water. sounds healthy yes? taste alright ,but later I'll be going to georges's bbq for chicken,fries,gravy,mayo and hotsauce he he

C'mon over VitaminD! I just put the burger and onions on the grill. Wife and kid off island for a few days--kick'n back. I ate the beans for lunch, too. Never had luck making fries.

I ate in stages, as I was doing a big batch of cooking tonight:
First . . . whole wheat crackers with the last of the homemade chicken salad (chicken, celery, kalamata olives, smoked habanero powder, hot sauce, mustard, mayo). A little appetizer amount.
Second . . . wife taking too long at the grocery, so hit the leftovers: red beans & rice.
Third . . . wife gets home and cooks the main course: steamed shrimp served with lemon, Old Bay seasoning and cocktail sauce (guess that's the veggie).
Fourth . . . the quadruple recipe finally gets done, so you gotta taste it, right? Chicken/cheese/black olive enchilades. Mom's recipe. Yummy.
Fifth . . . need something sweet, so I guess the flavor has gone through the other little item I made tonight: Bing cherry kefir (whole milk kefir made from commercial cultures, not the real kefir grains, Splenda to cut down on the sugar, vanilla extract, a dash of cinnamon and of course, pitted crushed Bing cherries). Yum! Nice-n-fresh.
Should have had some veggies, too, but . . . well, beats eating at McDoogles.

catfish, fries, and broco all were good...i learn every time i make a meal as far as cooking temps, the way to cut stuff up, etc....it's the subtleties that make the meal...

Chicken, potato & chick pea curry & rice. I cooked it slowly Thursday night from scratch, hand ground the spices & the business. Had some for tea last night & just finished what was left with some aromatic basmati rice.
I think i'll make another next week, took a long time to make, but it was worth it.

they just opened a panda express out here, i haven't tried it...
i honestly can't eat the food i cook right away, it's for pops and kids, and they are happily munching away...i tasted (actually some peoples meals worth

) and i can see why people like dark meat...when i lived in chicago and ate tons of mexi food, i always noticed that the leg and thigh were lots better than the crappy roasted/fried stuff i got growing up...but this HOT roasted/well seasoned/covered in olive oil/basted in butter bird is the shit, and the dark meat was dee-lish...i asked my son (while chomping on a chicken leg mouthful) how it was, and he brought up one thumbs up, a second thumbs up, and said "i need more hands", and you just have to think you did pretty good after that endorsement....

ummmm....you ever BBQ something "jonesy" (edit: johnny, i get it...)? there is bound to be a bit of blackie bits, and i wasn't able to schedule the photog and set dresser i usually work with for the beauty shots...but trust me, it was very yummy...

Trying to decide whether I've earned a pork barbecue sandwich with fries. Worked outside in roughly 104F/40C temperature, which with humidity factored in "feels like" 112F/44C. (That's if you're furless. Feels hotter still when you're covered with thick fur. :-\ )
So... phone out, then pick up a barbecue? Or fix something with leftovers, maybe a steak quesadilla... but I've been eating those for days now. Hm. *ponder*

I do so wanna, but money is even scarcer than usual so I'll have to go with what we've got already. Plus I'm plumb wore out from a combination of phone support work and farm chores. Don't ask which was grottier, I can't decide.
Not up to the bother of assembling a quesadilla, so I'll go with a boring (but exceedingly easy) grilt frankfurter. Maybe finish up the Zatarain's rice (wild and long grain with not-too-hot Cajun flavoring).

Lemon & taragon cream chicken, thyme & tomato baked cannelini beans (fancy baked beans...), Viennese potatoes.
Tonight it might be garlic mushrooms, followed by ribeye fillet of beef (cooked blue) on a bed of mustard cauliflower in a porcini/red wine jus with steamed asparagus.
If you're gonna do it, do it properly I say. I can't stand crap food. Most of the herbs, lemons, even most of the veggies are out of my garden too.
...having said that, I'm off out to the DIY store later and I think I might get a Subway with triple helpings of jalapeno and artificial sauce. Slumming it with the peasants isn't always too bad...

But good cooking is good for the soul - it's fun creating it too. I have a posh pinny and everything...

They might go by some other name, but I've always known them as Viennese potatoes...
The ones where you parboil them slightly to soften them up, then finely slice the top half almost like a loaf of bread but leave the bass intact. Then you smother them in loads of butter, top of with some salt and cheese (parmesan or gruyere or whatever), then bake them. The fancy sliced top bit opens up and get all crispy. They're just poncey baked spuds really, but look fancier and absorb more butter, so they taste different (no skins either).

Aha...found a recipe under the name Hasselback potatoes. Slight variation of, as the one I read uses herbs and no cheese. It's the slicing thing that does the trick though.

Fillet steak cooked rare with a nice porcini and cream sauce - probably some nice salad and some kind of fancy potato depending on what's in the fridge. Preceded by several beers and washed down with a nice red of some sort...
