Or some way to modulate LFO depth would be nice, to create delayed vibrato effects without having to use the mod wheel.

I will add a level modulation input to the LFO. It should be in the next beta.

You can use amplifier module for that - just put signal from lfo through amplifier and modulate level of amplifier as you want.

Yes use the VCA (amp) to change the amplitude of the LFO. You can use ADSR on the VCA to bring the LFO in gradually, like a delayed vibrato.
