Is it considered standard when dealing with audio data to store in working format of floats from -1 to 1?

In the VST world: yes. The data format for almost everything in VSTs is floating point with values from -1 to +1. Audio data and parameters are all communicated with the host in that format, so for your internal format it makes sense to do the same.
