Just starting out - whats the best workflow for recording an instrument and exporting from your DAW?

Let's say I am recording an acoustic guitar and using two mics.

Whats the best and most efficient workflow in my DAW that would make for an easy export.

If I am recording the notes one-by-one, do I put each note on a separate track and trim each note and line it up, or do I put the notes on one track and there's an automated process that could do a quicker export for me?
Just looking for the best time-efficient workflow.

Then I guess you end up with files like:
guitar_mic1_C0.wav
guitar_mic1_C#0.wav
guitar_mic2_C0.wav
etc.
