As a really out-there choice, you could look at Igorrr's stuff. Thoroughly ludicrous breakcore with baroque stylings. Not really my kind of thing, but jumped into my head when I saw the question.

From Portugal. Not sure if that's what you're looking for, but here it goes.
I think these are excerpts from a reunion concert in 20??. It was a well-known band in the early/mid 90's. Mainly celtic influence (new songs on 4:03 and 6:37):

This is a tradicional song from the Nordeast of Portugal (Trás-os-Montes), a region with strong celtic roots (pipes, etc) and it's sung in a dialect ("mirandês") that I read that is close to another dialect in a neighbor region in Spain (Asturias). Could not find any live footage, sorry (check the next one):

Country and Western in a thread about middle age inspired music? I think we are moving waaaaaay off topic now. I know this may be as close to a middle age that you can get in the land of milk and honey but still.....

It would probably help if you changed your thread title to "Seeking Middle Ages inspired modern music" ("middle age" generally means something else).
