Well the point I wanted to clarify is that in a chord progression where all of the chords are in the one key a mere chord change does not through itself warrant ascribing a mode to it, there is no use to that. Jazz people do spread this one around, but it is only extraneous mental activity. If, on the other hand you introduce such as G7b13 in the midst of, or ostensibly in C major, here is Eb, outside the key and you'd want to be prepared to deal with it. Or you may want something to force complexity onto the G7 and employ a scalar device to achieve it. All of what he typed there is all white keys, and he was only ever talking C major.
