Any reason to buy windows 7 Pro or ultimate instead of
Windows 7 Home Premium for DAW? or is Windows 7 Home Premium enough?

Not unless you've got apps which can run in XP but not Win 7 (in which case you could use Pro/Ultimate's XP-virtualisation mode) =- in which case you'd also need a virtualisation-capable motherboard and processor. ANd in which case you might as well be using XP.
WHy aren't you using XP, BTW?

I just want to be able to use more ram and so on.

I'm using Windows 7 Home Premium 64bit with 6 gigs of ram and it's great.
I haven't run into any problems apart from a bit of faffing around to get my soundcard running..

I still don't understand this. When I did the RC of win7, I had to install a bunch of stuff as "xp sp2" to get it to work. Is that the same thing?
