bong vst has velocity trimmers for many parameters, which means a patch can respond to snare rolls in more ways than simply being louder.

I think Bong would be cooler with a sequencer inside it, and many presets. I do have patched sequencers already I could use with it, but it's always fun to hear it from the developer's perspective.

I own SonicCharge Microtonic, Arturia Spark 2, NI Battery 3, and a few other soft-drum machines.
So, to answer your question:
It looks to me that it might be what you're really looking for.
It's shock-full of drum instruments, ready made kits (with lots of inspiring and interesting patterns/songs, btw).
It supports sample, analog-model synth and physical-model based drums. So, 3 sound-engine types + REX support.
It has a very interesting on-the-fly sequencer loop capability besides audio-based retrig/loop FX which can easily help with snare rolls.
So, I found and still find, Spark the simplest ready-to-play all-round drum machine, fun to program patterns by step or real-time (especially with the controller ) or play from DAW or external sequencer.
I also like Microtonic but on a totally opposite level of use, for pure electronic sounding kits and the awesome self-generating pattern possibilities through Patternarium.
It's simple to use, interesting to grasp but doesn't support drum samples, which looks like a requirement in your case, if I understood you right.
So, my honest opinion is: Give them a try yourself
