Sidechaining has nothing to do with width.
I is vital for track dynamics, though, which are very important to make your tracks huge. I just got it right yesterday
And yes, you need both.
As to width, I prefer polyphonic synths with "stereo" or "width" knob instead ofstereo-widening plugins. Gives more realistic results and more control over what's actuallyy going on.

A "side-chain" signal is a signal used to control some parameter rather than one that is eventually mixed into a master bus.
Any module that takes a signal as a control input could feature a side-chain input. Effects such as gates, compressors, various other envelope followers, detectors of filtered bands and so on generally by default use the input signal as side-chain. For example a gate allows the signal to pass if the signal is above a threshold. There is nothing to prevent you from using two completely separate signals here though.
The name side-chain is stupid in my opinion and I've never liked it much. Ideally we could call these triggers / control signals but unfortunately the name side-chain has caught on.

A slight wide, high shelving boost around 15kHz on the difference channel can sometimes work wonders.
