I used to use in ear sony headphones I got them for jogging and later used them with Ableton Live. Then I took a usb stick to my mates house to show him a song I had done and I was like WTF where's the bass gone.
Now I use AKG K702 open headphones far better sound quality more detail less bass than in ear phones but better bass sound they tell me when there's not going to be enough bass for hi-fi speakers.

I would say it doesn't really matter. If you focus too much on the equipment you're not focusing on the right thing. I have some crappy old headphones that I use when just screwing around on keyboards and it doesn't really matter how good or bad they sound - what I'm playing is much more important.
