Set spectral dynamics to level shape mode, where you can 'draw' your curve. Add a standard line curve so that it has the middle 'curvature' breakpoint. Create a modulator and set it to modulate this middle curvature breakpoint. When active, the modulator will work, but the display will not show the graph moving unless you hold down the mouse button over the graph.

Arg, it isn't a display bug. It actually doesn't change the process unless you're dragging with the mouse. So it's a bigger problem than I thought.
