I'm trying the demo out, what is the easiest way to get the left channel running down parallel chain 1 and the right channel running down parallel chain 2 (in a 2 row configuration, 100% wet on processing)? I'd rather not have to insert a plugin at the front of each chain to mute the channel I don't want.

As you have noticed, parallel chains are indeed made to process the entire set of channels in parallel and remix them together before reaching the POST section.
For dual mono processing, it is actually simpler: just put the effects in series (in a single chain), and using the Audio I/O menu item, force them to mono and select on which channel they should apply (channel 1 is left, and channel 2 is right).
You can put them in whatever order and even insert stereo effects in the same chain. Unprocessed channels are just forwarded to the next effect:
- Effect1 (Left) - Effect2 (Right) - Effect3 (Stereo) - Effect 4 (Left)
Hope this helps!
