What are the differences between these?

A fade is applied to a single audio clip at the start of the clip (for a fade in, which starts from 0 volume) or at the end of the clip (for a fade out, which ends at 0 volume). Volume automation applies to the track as a whole (not just a single audio clip), and can specify any sort of volume change over time.

The better one to use depends entirely on the situation. You can perform any type of fade with volume automation, but not vice versa. On the other hand, volume automation is generally more of a hassle.

also your volume fade can be per channel so post any effects processing which is often [preferred

And if you have pre-fader sends on a track, those will still be on after you lower the volume on track fader automation.

fade in/out for a sample is done to only the end and stare of sample
volume automation can be done in any part of a sample

fade in/out is easy to be done when compared to vol automation
but volume automation gives more control over fade in/out
Win 10 x64 with specs enough to run DAW without bouncing any track
