Before the plugin age the MC-202 and other low-budget analog hardware have been used instead of the TB-303 as well, and some great tracks have emerged that way. So yeah, music production is about the end result. It's different though when you look at an instrument from the composition or performance point of view. I might opt for a cheap piano sound when producing a track, because it happens to fit perfectly.
