I wonder are there any sort of plugins (Not synths) where you can modulate the incoming signal with some sort of a waveform (Modulators)?

Its not a common type of effect. The only ones I have seen are in Reaktor http://co.native-instruments.com/index.php?id=userlibrary&ty pe=0&ulbr=1&plview=detail&patchid=3567 this one is good.

I've heard of FM effects where you modulate a delay by incoming volume, I don't think these used any oscillators.

Aciddose made a good one.

There is a BiFilter free old version from Tone2. It has FM (sine, saw and triangle) capabilities, also AM.

Good luck, and have a good day Smile
