My old DAW (Studio One) had a feature in the MIDI editor that would let you select the scale you wanted to use and then it would let you set the key and it conforms all of your notes to ones in that scale. How do I do this in Cubase? I can't find anywhere to set the scale or key.

there is no such a feature u can only colorize them
using the chord track, displays the in-scale, in-chord, non-chord notes with different colors, but that's all (the colors are visible on the piano keys too during note selection/drawing and working with note moving too, so not snapping but quite good)

There are at least two ways you can do it easily/directly.
Use the MIDI Insert called MIDI Modifiers and set the input filter at the bottom to the scale you want
Use the Transpose tab in the Midi Editor
You can also use the Transformer MIDI Insert to do crazy levels of control of the input stream.
You can also set the track to follow a chord track
You can also use the Chord Editing tab in the Midi Editor to fine tune individual chords and play with specific voicings.
