I'm absolutely blown away with the quality of these CSS-5 microphones! I also imagine a large part of the sound is due to the recorder which is usually a Sound Devices 702.

Well that's hardly a surprise, is it? The recording chain you just mentioned costs almost 10 000$. The microphone isn't what I'd call cheap either. 
However, I have to say that the Sound Devices microphone preamplifiers are some of the absolute best in the business in terms of sound fidelity.. they just "sound good" in way that most people would agree upon.
Just last week I got to work with some dialogue recordings done with a Röde NTG2 recorded on an old Sound Devices 633. Even this mid/budget/old chain sounded excellent.
So yeah, no surprises there.
If you got "Sanken kind of money" you may also want to take a look at the Shoeps line of mics.

Just checked the prices. It looks like if you are serious about sound that this setup is actually pretty affordable in my opinion. It's a industry favorite among sound designers from what I'm reading about. I have this setup on my personal wishlist, and I am completely convinced in terms of the quality.
