I'd second the granular approach for interesting and great sounding vocal pads, been using it myself quite a bit lately with a selection of vocal and choir samples from all over the place, Padshop Pro and The Mangle (I actually prefer the latter one over PS Pro - $19.95 very well spent). Import the results into Iris 2 and add some decent reverb for some really crazy results.

Also pricey is Aeris--been looking at it for down the road purchase, but not sure how it compares with Exhale and just sample packs in usefulness/value.

My personal favorite for all kinds of complex pads and soundscapes definately is Omnisphere 2. It also has granular synthesis and you can get very creative with it :) Also lot's of great Soundbanks are meanwhile available
