Interesting recipe for stuck notes.
If i've deciphered your tricky question, then Pure Data to the rescue: For demonstration purposes, i chose an arbitrary value of 8-voice polyphony, but you could have different counts for each channel, with automagic voice reallocation. Couldn't be effed goin' to those lengths (unless you look good in a skirt -- even then…).

What is your controler setup? How do you want to play it? Two keyboards?
I just don't see what problem in the first place should be solved with solving that technical question...
