Playing multiple sounds using external keyboard for live performance

Hi there. Just getting to grips with this great program but I've struggled to find out how to have multiple instruments sounding simultaneously - a bit like layers in Mainstage - for live performance rather than recording (eg piano sound with a layer of pads as well). Can anyone help me with this? Many thanks
