On the sampler side Independence and kontakt2/3 support poly aft.
It's a bit limited on Independence.
Aft and poly-aft is not received by the scripting engine in Kontakt, but it's possible to convert aft to some CC and poly-aft to a double paired CC using a multiscript.

I would expect that other samplers support poly-aft as well.

What we really need is a good keyboard with poly-aft, at a reasonable price.

you could also work around this problem and convert aftertouch/poly pressure to cc's -> every vst supports key aftertouch or poly pressure.
Not the same - different poly-AT values need to be applied to individual voices.

The Korg Kontrol49 has "last key" poly aftertouch... i imagine this is not the original intent of poly aftertouch, though... i've never been able to make use of poly aftertouch, but i know it would be very useful if instruments and controllers supported it fully, regularly. Aftertouch itself is a great feature, and i just have this instinctive sense of what the potential of full poly aftertouch could do... if only...

I think I like this "last key" aftertouch idea. You could also have low and high key priority for it. Must consider adding that as a feature someday.

Could also very easily make a MIDI processing VST plugin that could convert channel aftertouch to aftertouch of the last played note. Though of course will still only work with VSTis that support poly-pressure.

That's what I'm doing with my little js script plus I use a hold pedal to prevent new notes to steal the aftertouch pressure.
It's fun, but still a bit frustrating, real poly-AT would be great.

Could also have a pedal that assigns the pressure to a given playing note depending of the pedal's position.

Another trick would be to hold the playing notes (latch), and depending of future note velocity on these same keys would send the poly-AT message.
Good brain exercise, though a keyboard with leds showing the playing notes would help :D
