I don't get the options after adding that line... Anyone know specifically on mac where it is?
And why is this not the default?

I added that functionality (multiple functions to a single shortcut) a couple of years ago, but then discovered it's not working as intended in certain situations, depending on which functions are combined. And as i had not the time/plan to work it out, i wanted to remove that option cause i don't want to support things that don't fully work as intended, but users asked to keep it in some way, so that's why it's still there, but in some hidden way.

One day... it'd be nice if it was actually scriptable... but not right now...

I can't find the text file to add it to in the latest Mac version. Is there a secret for this? Thanks.

Suggestion: add this as the first line of the file. It seemed to just ignore and remove it if it's at the end (?).

No, it shouldn't matter where that line is but be sure to only edit that file when MuLab is not running, otherwise any changes you make will be undone upon quitting MuLab cause then that file is updated. Maybe that was the cause?
