You have two real options.
Check out Organteq for the best physically modeled pipe organ. Not sampled, but fully synthesized. It is only a single instrument, modeled after a Cavaillé-Coll french romantic instrument. To me, Organteq sounds like I'm in the uncanny valley. It tries to model the irregularities of a live instrument, but something about it is just off to my ears. YMMV.

It uses various filtering and modeling techniques to represent things like enclosed divisions and tremulants, a wind model which causes pipes to respond differently depending upon how much wind is available in the instrument, a turbulence model, and randomized detuning that corresponds to what one might expect when playing a live instrument on any given day. Many organs are available for Hauptwerk. It comes with one. There are even some excellent free ones available. It uses iLok, but doesn't require a dongle.

Hauptwerk is king, though it's kinda expensive for most hobbyists.
There's also a free soundfont called "Jeux 1.4" if I remember right. Plogue has a free soundfont player, Sforzando.

This is vastly inferior to the current version of Hauptwerk, but incredibly good for free: https://sourceforge.net/projects/ourorgan/
This is basically equivalent to Hauptwerk 1.0, and can even play old, non-encrypted Hauptwerk 1.0 ODFs. It is not a plugin, though, so you would have to do some routing magic with a DAW to make it work.

Thx. A plugin would pe perfect. I saw sonokinetic's toccata. for 60€. But paying does not work

Until Organteq, my organ playback of choice was Jeux d'orgues 2 soundfont ( http://www.jeuxdorgues.com/files/jeuxdo ... ndfont.rar ) using any free soundfont player (eg. Juicysfplugin - https://github.com/Birch-san/juicysfplugin) ran through any decent reverb vst

I should mention that Jeux sounds a lot better with reverb added. In fact, with enough reverb even very synth-y sounds can end up sounding like a big church pipe organ.
