I’m not sure there is an overall valid definition of “pirate theme song”. It’s not exactly a culturally defined genre.
Probably the closest you can get are shanties or the soundtrack to “pirates of the Caribbean”, which is what most people would think of first, probably.
If it’s a song with vocals, the cliche would be something with stomping and gang vocals.

And the style known as hornpipes are particularly associated with sailors.
As per this (well-known in the UK to people of a certain age of children's TV) hornpipe.
Also, you could look into this stuff and diminish the obvious metal component...

Dunno why, but my first thought would be that pirates play accordion. Maybe since it´s a small portable instrument.
3 songs I can think of where you can smell the ocean, though not about pirates, are Billy Joels Down Easter Alexa, Rod Stewarts Sailing and Roger Whittakers The Last Farewell.
Maybe those could be a source of inspiration.
