How can i get acid sounds with 'attack' on the notes? Evident in this track at 1:08: https://www.youtube.com/watch?v=DsfyKolWlno
Also as a separate question, the acid sound mentioned above seems to have all of the 'note' removed and just the 'distortion' left, if that makes sense - is there a trick to getting this?
Any advice would be appreciated.

It's about fine tuning the filter envelope and resonance, amp, decay etc etc
The type of distortion (although I used a quick waveshaper.
And you need that eq at the end to make room for the bass & Kick

This sounds so good! I love this type of "acid" sound.
Silly question, how is the midi/notes of this acid line going?

Choos has nailed it, although I think there's a slightly increased attack in the original.

The way I did it isn't 100 % bet I can spend hours trying to get something exact but then Ive wasted hours and noone wants to watch someone dial in 1 sound for that long.
It's to get you close and let you fine tune it with your own synths and preferred fx.

The classic acid "woaw" sound is what you get when you take a TB-303 (or any of the better emulations), crank the resonance, increase the accent and then distort to taste.
The 303 really is special when it comes to the "woaw" because of the unique accent circuitry. Particularly at high resonance, it will smooth the envelope for accented notes, sweeping them up and down in a way that your average ADSR simply cannot quite reproduce. Even more interestingly, when you have multiple accents in quick succession (particularly so at higher tempos) each successive accent will also sweep slightly higher, which gives it a sort of "pushing" feel basically for free.

Yeah it’s a high resonance lp filter with the cutoff modulated via key triggered envelope. No sustain in the envelope, just play with attack and decay to taste.

This is closest I get... But it still feels it's not quite right. Any advices what's going wrong here?

I promise, all it is is G#. you hear a hint of difference between note which could be because it's analog and also the notes that come right after each other the first is stopped just short of the next one so that give an illusion of it sounding a little different. But it's not
