Best DAW or app for Audio to MIDI in 2021?

How to do this, that and the other. Share, learn, teach. How did X do that? How can I sound like Y?

Was using Dodo and it seems it only whet my appetite for an audio to midi coverter that is more accurate for a variety or different types of music (percussion, melodic etc.). Would love to get advice on what you all think get the best results.

Thanks!

I've been using MIDI GUITAR 2 for a couple of years now and it works very well with non-polyphonic audio, as well as serving as an excellent midi interface for the guitar.
