Does anyone know if it's possible to adjust the volume of each string in strumming mode?

No, you can't, but what you can do is us the "strum center" value to virtually control where the hand is over the string when it strums.
So if you set it to 3, you will hear more of the middle strings, if set to 1, you'll hear more of the top string and if set to 6 you'll hear more of the bottom strings, so it kind of does what you want, but in a natural way.
