Which synthesizer is most suitable for ambient music?

I've found the Korg Mono/Poly to be the sweetest thing when it comes to pads.

I would think Fathom could go along way here because of the long custom envelopes and layer capability

Who cares what 'theory' dictates? It's a creative medium, so do what you want to do.
For me, ambient music is about describing mood or imagery with music. Personally I like mixing traditional textures (which CAN me sound+reverb) with organic 'real' sounds and instruments. In my thousands of posts here I don't think I've ever linked my music outside the music cafe section, but I'll drop a couple here as example. They're not all the same, just different 'feelings' I put down to music. The point being, do what you want, how you want -

Although anything can be used for ambient, especially with the right effects, there are still some synths with a variety of synthesis types that can really do many different types of ambient sounds, not just vangelis analog pad with reverb. Especially those with granular and interesting digital or sampled tones and weird noises.

Like everyone mentioned, it is not about the synth but how you use it and what effect plugins you choose. You can achieve a lot using stock effects in your DAW or you can go easier route and get every Valhalla freebie and maybe buy Shimmer. Don't spend too much. Learn to abuse Omnisphere, but it is gonna be hard if you do not know basic synthesis, it is not user-friendly. I don't know if you are rookie or experienced.
Xfer Dudaduda Serum will always be my go to 3rd party synth. Especially if you want to actually make your own ambient presets and modulate the crap out of them and not just jump through presets. It is quite easy to learn due to its modern layout and interface in general is nice to look at. But stop buying stuff, make music. I've been in your place and decided to stick to solely stock synths and it was the most productive period of my life.

Forgive me if this has already been asked and answered, but what does the OP feel they're not getting from the Omnisphere Synth which they own?
Maybe stay in the same Spectrasonic eco-system? i.e. Trilian, Keyscape, etc.
If you're wanting to stay with the whole "psycho-acoustic" philos, but reaching also for something different, then also look into the Tone2 synths.
