Why would a sound developer purposely reduce their possible market by two thirds?

The Logic Pro stuff for the most part is pure OSX or iOS only. So look to their site for list of what's what. Stuff included in Logic Pro X include: Drum Kit Designer, Drum Machine Designer, ES, ES2, EFM1, ES E, ES M, ES P, EVOC 20 PolySynth, Sampler, Quick Sampler, Step Sequencer, Klopfgeist, Retro Synth, Sculpture, Ultrabeat, Vintage B3, Vintage Clav, Vintage Electric Piano...and... Alchemy. There is a lot there. Apple gives this stuff away ... as part of Logic Pro X's $200 package. Just sayin'. If you picked up an Apple system, and dont mind being tied into that ecosystem.. Logic Pro is the deal of the century for keyboard musicians.

Quality Over Quantity
I know a few solo developers of Mac-only standalone audio apps. They can compete in the market by having more features, a terrific workflow, and compatibility with the constant MacOS updates by being Mac-only. I know only one such developer who would like to go cross-platform, but he needs to hire a Windows developer and cannot afford it.

So that usual rhetoric doesn't really apply as an answer. We know when Apple considers something as quality, because they buy it and destroy the cross platform. But again, that doesn't really apply to my comment either.

Just one precision, all Moog synths are AUv3 BUT they have a wrapper to VST3. They are not so great in my imho but your mileage may vary.
If you want to sketch music on your iPad and reuse easily on your laptop/desktop later the best choices are Fabfilter Twin3 (and other effects) and Synthmaster 1 and 2 (3 will come mid-25).
So TBH, after 3 years of using MacOS, I don't see any element that prevent me to go back to Windows when I'll have opportunity.
Windows on the other hand has a few plugins I am missing in macOS. In particular one that is helping to align the phases of your kick and bass and is awesome... (and I am frustrated not to have it lol).

My main tools: Kontakt, Omnisphere, Samplemodeling + Audio Modeling. Akai VIP = godsend. Tari's libraries also rock.

Metasynth? I have it and think it's amazing, but don't use it nearly as much as I thought I would. Probably need to change that with a deep dive.

It's ok. Bitwig Studio comes with more and is substantially better for electronic music production workflows IMO, and goes on sale for the same price. And also allows resale. And supports more plugin formats. And... etc etc. I own both and haven't used Logic once since buying Bitwig.
I also prefer Reaper over Logic as a general purpose DAW, by a lot; it's much more stable, it's way more flexible in both MIDI and audio routing, and has fewer bugs I have seen. Last I tried it, Logic *still* had a bug where resizing a plugin window lost its keyboard focus forever until restarting it; not sure if that's fixed or not by now. And Reaper is a much better deal at $60 for two full versions of upgrades (which will cover several years.)
Logic's remaining real advantage is out of all DAWs it is the best Mac app (in that it is the most Mac app-like and adheres (mostly) to Apple's HIG.)
