Sooo, just for the sake of clarity; you can use the synth OFF-LINE, by closing (logging-out) your ON-LINE connection, but (obviously) not by de-activating the synth itself. Which (not having done it) I'm assuming you would have to be ON-LINE again, to 're-activate it', again.
So you can't use it offline. You have to be logged in to the synth itself.

I used it for a couple of hours while offline earlier today. Works perfectly. I only ever logged in once, when I first got it months ago.

No. You just can't log out of the synth, which would be like de-activating it. You can use it offline.

I'm not sure if there is a time limit on that but I hope not. Like how with Roland Cloud you can use it offline until the monthly call home is triggered and then you are auto-deactivated until you let it connect again. Total pain. As far as I'm away Ultra is not like this.

I just downloaded the latest version 1.0.11, and that required signing in for the first time since purchase. I've been plenty offline since then, and Ultra just keeps working.

If I'm offline and not logged into the synth, I can't use it.
Having to log in to VST's has its own load of issues.

the sign in is required when changing computers/locations.

when you have two spots where you produce, (eg. studio and home) you have to re-login each time.

Yeah why would you log out before going offline? Aside from needing to switch computers and re-login, but they've already said that is being addressed soon.

And logging into a VST to use it is a red flag for me.
And if it can be used offline, you shouldn't have to be required to log into it in the first place.

I'm not here to spoon-feed you reasons you should easily come up with yourself.
And if it's not an issue, why do you have to be logged in in the first place when you're offline?
