Going through I am noticing it less on less patches. I may have successfully disabled some start up processes, in between restarts.
However, I am hearing artifacts, and going over 100 CPU with the following, when using more than 5 notes:
MPE Mahogany Rose Organ
MPE Sine Pressure
Juno Organ Wave

I couldn't get the juno one to misbehave at all.
The other seem to use a lot of cpu at the initial note on, I couldn't get this issue by playing live but could when sequencing the notes, the average live cpu is :
MPE Mahogany Rose Organ = 49%
MPE Sine Pressure = 41%
Juno Organ Wave = 27%
For the MPE ones if my buffer size was 64 I get a leap to over 100% and a click at note on sequenced with 6 notes.
This cpu jump is less the larger the buffer size is, what buffer size are you using?
Your cpu has a geek bench single core score of 873 and multi core score of 2820
My cpu has a geek bench single core score of 729 and multi core score of 7031
So for a single instrument your machine should perform a little better than mine.

Thank you for taking the time to try to reproduce.
Doing another round of interrogation of the system with a belief that it 'should work', I believe I found my root problem after reading through

My desktop (Windows) was set to the 'Balanced' power plan.
After changing the power plan to 'High Performance', I can play the max poly for each of the patches with similar number as you had observed.
