I am new to using VST plugins.
I run sound for a live band and want to investigate having offboard effects from a Soundcraft ui24R mixer. Can Patchwork do this and if so how is the best way to achieve it?

PatchWork was mainly designed to act as channel strip (handling effects on a single track). There are ways to simulate multiple tracks and use separate effects for each channel, but it is not the most convenient.
But you can typically use PatchWork as an effects loader for your aux busses. Just send the aux to the laptop where PatchWork is running, and connect the output of the laptop to aux return on the console. It will work as an external effect unit, but with VSTs
