I have an 8 note sequence that I would like to feed into a delay device (Bitwig or 3rd party) in such a way that only selected notes of the sequence are processed by the delay, say the first note only, or the first and fifth only. Is there an easy way of doing this, without manually separating the notes into separate tracks and processing them separately? I've got a nagging feeling that this is a blindingly obvious question, but I am not getting it!

Put the Delay on FX Track (100% wet/mix) and then automate the Send amount on that channel for the notes you want affected.
You can also do it on a single track:
- insert an FX Layer after your instrument
- add the Delay to 1st lane of the FX Layer, 100% wet/mix
- put another FX Layer in front of the Delay on that lane
- add empty lane
Now by automating the Mix knob of the FX Layer that's before Delay, you let the signal reach the Delay or not (mix=0 signal goes through, mix=100% it's blocked); while the dry signal goes through the empty lane.
It should look like this:
