From what I've read over the past months, U-he Hive is what you're looking for. Whether you're looking for sounds as thin as paper, onion skin, sheer pantyhose, ice, razor blades, etc.. it's all there. You'd be hard-pressed to find anything that does this better.

Pretty much everything by Arturia, I actually quite like the Jupiter emulation for thin sounds with resonance in the middle and not too much filter modulation, the latter of which causes it to bark like a dog. It generally still needs some highpass to get rid of the muddy bottom end.
Air Loom is also good for thin sounds.
