Has anyone used the MAX software to reconfigure the EOWAVE USB Expression pedal? If so can you be specific as to how to change the channel from the default 1. I can't get it to work and their support is the worst. I can't get an ANSWER from them

No, but if you're not running it exclusively in Max, there are channel remapper plugins. Such as Piz or NDC.
