The app I find most useful is HiFiCorder. It's great for field recordings. Considering I have my droid phone with me nearly everywhere I go, I've been getting into the habit of sampling the world around me. Nice for adding ambient noise and such to compositions.

Other than that, I've played around with Caustic on my droid tablet but have to admit I'm a bit disappointed I opted for the droid tablet over an iPad.

I like Chordbot, LoopStack, and would be remiss in not mentioning Etherophone (written by my brother).

Plasmasound and NodeBeat are another two I fool around with a lot.

gStrings is probably my most used one.
