I have a decent PC - i7, 12gb but it's a few years old and seems to struggle a bit at times (running Cubase 6). Is Sunbird or GD6 intensive for older PCs? I know everything is relative but should they run OK?

You should use a ssd for sample libraries.

It all depends on if you use a very low buffer or not. Since it's a guitar, only 6 samples are played at the same time (up to 12 or 20 for the transitions and noise effects), so it's not hard on your CPU or HD for that part.
There is a lot of processing to recognize the chords though, but it's nothing compared to a piano library for example.
