I was close posting a list of my favorite and/or "essential" plugins but i decided not to as this thread will simply end up in a list of most available plugins out there like in countless similar "Best Of" or "Your favorite plugin" threads in the past.
The plugins that are important for one person could be totally unimportant for others.
With certain plugin you will also always end up discussiong copy protections, especially if they use eLicenser or iLok dongles...

Seriously, after downloading just about every free plug out there, I finally cleaned house and got rid of everything I don't use. What's left is essential. Honestly?
Nothing!
I can make my music nicely with just my keyboards and Bitwig (or other DAW). I even can use my iPad as an external instrument
But I'm spoiled with the easiness and low prices of the soft instruments (plugins), so I use them instead.

Zebra for wavetable/modulation options - great for pads
Monark for Moog sound
FM8 for FM
Diva for VA other than Moog, although it does a decent Moog as well, just not as good as Monark for me
Kontakt for VIs, particularly piano
vb3 for Hammond Organs
