I am new to FL so this is my first update. Do updates just install over the old version? Or is it more complex. I don't think I have changed anything drastically. Are these sorts of updates necessary or can they be skipped without too much trouble?

Yes, just install over the old version. It's fine with every minor update.
But every new major version (11.x, 12.x, 13.x etc.) is installed in a different folder.
It's by default so don't worry and just install.
