I wouldn't call myself a producer but as a musician and a mixing engineer, I use hardware because of the interface. I also use a lot of software, but usually I prefer to have something like a Nektar Panorama (not-so-subtle-advertisement) to interact with parameters, rather than a mouse and keyboard.
For me, it has almost to nothing to do with the sound. There are a few things I have that impart a special character (some 500 series modules, API 2500, UBK Fatso, etc.) but the individual character is less important than getting the sound I want. For me it is easier to get sound I want when I have when I have the immediacy of real-time controls. Perhaps it's a psychological thing. I certainly would not say that hardware sounds *better* than software (without a qualifier and/or a specific example).
I use hardware because it's what I prefer to use. Few of the reasons for that preference are related to the sound.
