There's a very unique, bongo-like(?) roll sound, that plays distinctly through most of the song.
I imagine it's some kind of sample manipulation, but it doesn't seem granular or anything.
Anyone have an idea?

Well, if you want to just re-create the sound so you can play it yourself you can always resample it(from the beginning) in harmor or serum or whatever you want and then maybe re-add the delay and reverb on it.
In case you actually want to know the technique to get that sound from scratch, first try to make a plucky sound in your synth of choice add a comp filter and see what you get

He's missing a comma. Add a comp (compressor), filter, and see what you get.
