Yes, definitely. iPads can be used as instruments inside DAWs, providing they can recognise it.
No need for “extra” hardware other your existing iPad cable.
I’ve been using my iPad Pro that way for numbers of years :)

Absolutely! I just connect my iPad Air 3 to my MOTU M4 via the Roland UM-One Mk II and a lightning camera kit. Then I set up a MIDI channel for each audio unit instance in Audiobus or AUM and have Renoise or something sequence it.
