Best easy/minimal settings UX but maximum effect compressor plugins?

There are some nice compressors with no/minimal timing controls (i.e. attack/release) but then really you are just pushing the "choose a timing" problem onto the "choose a plugin" problem.
That being said, I suggest trying bx_opto which has just one speed control and the character can be tweaked using the sidechain filter to make it "grab the right thing".

that's true. on the one day every year, PA is not doing a sale.
but if you're on a mac, i would avoid everything PA. The last updates were a mess and only crashing (at least on my mac mini m2).deleted everything PA since then.

Best kept secret is TB Ferox. Don't try to use it as a tape emulation, it's hiding that it's a superb very simple character compressor. Don't f**k about with any of the knobs except 'compression' and 'drive' and it excellently squishes drums/guitars/bass/vocals/anything really.

Also, u-he Presswerk in "Easy Views" mode is pretty darn simple.

easy compressor you mean one knob style? there are so many many...
supercharger yes, waves mv, klevgrand korvpressor, ott and argent compressor for upwards, true dynamics by kazrog, purafied vu comp and led comp, excellent fuse audio comps and so on and so on...
but I want to point you to one of my favorites for happy accidents:
lvc audio the condiments - these guys rock pretty hard
or simply get "the glue" and just use "dr dre" settings
