Hey,
(How) is it possible to select on which string a certain note is played? For example - if I have a MIDI track in my DAW and want Ample Bass to play an E on the 7th fret of the A string instead of the 2nd fret of the D string.

You can use keyswitch to select strings.

Or using MIDI guitar feature on Setting panel

You can set 4 MIDI channels for 4 strings after turn MIDI guitar on.

While we're on the subject, is there a string selection keyswitch for the Ample Metal AME? I see that we can do this with MIDI channels, but the problem is that the VSTi won't play anything if a note isn't within the specified string/position. Basically, if I'm playing manual chords/intervals, I'd have to edit the midi channel of every single note in the MIDI.

The metal series doesn't have string keyswitches, but you can customize capo keyswitch to change strings.
