How well does this host perform with multiple source MIDI instruments playing simultaneously (in this case, 1 MIDI keyboard and 1 MIDI guitar)? Are there any tweaks you'd recommend for best performance?
TIA.

Hi,
I don't think this needs any sort of tweaking. At the moment I'm running up to 3 MIDI keyboards & 1 MIDI controller simultanously on one instance of cantabile f.e.. The way vstis in a set react are only depending on your mapping.
Of course every scenario is limited by cpu performance # performace needs of the plugs you implement but this does not rely on the MIDI configuration (and would not make a differnce when only using one MIDI source controlling all plugs).
hope this is of some help,
regards, humphrey

And if your sound card is multi-client (has multiple ASIO outs), you can run multiple instances of Cantabile and have separate mappings for each controller. This is huge for me, because I want to be able to change the subsession for one controller without affecting the other.

VST's are the cpu demanding elements.
Midi is not a limiting factor. Cantabile provides enough midi filters and other midi tools to control midi flow in a lot of ways.
