I use many amp sims, but I always come back to few of them (exclus.... ehm, mostly for distorted sound):

Studio Devil (the ADA preamp and Soldano), which I really love because of the natural response and feel.

Amplitube 3 (especially the Soldano, Jet City and German Gain, but plenty of good stuff)

Kuassa Creme, which also have a very convincing response / feel.

I always use those with either RedWirez or Recabinet IRs.

What I noticed is that Amplitube tends to sound a little more refined and polished, like if it was pre-EQed or something - when testing very similar heads with the same IRs, it appeared a tad less natural, in the sense that you don't hear the miking "rumble" or "harshness" so much... but for this reason also very easy to fit in the mix, especially if one's not used to get rid of those things with real mic takes.
In any case, I managed to get an almost identical Soldano sound out of SD VGAII and AMP and the SLO-100 in AT3... and strangely enough, I found myself preferring one for the solos and the other for rhythm... strange 'cause I barely heard the difference

I remember I really liked the Audiffex Mesa amp, as well as LePou's leXTAC (the SoloC and LE456 are also very good).

It's nice, but I've not been able to tweak it properly to say how good is it. However, the bass amp (GK) from Audiffex sounds great just out of the box
I like the acoustic sounds that you can get from Waves GTR Solo (which doesn't use an ilok) as well

I think the OP was talking about individuel sims when it comes to packages that contain a lot... but that's too hard.

When I'm in Amplitube 3 (and I usually am) I tend to use the Vox Coppertop, Orange Tiny Terror or the Orange Reverb combo (forget it's name) but I like a bunch that used to come with Metal too. Of course, all the bass sims (the reason I got into IK stuff in the first place) are awesome. I think it would be easier to list the sims in Amplitube I don't like... which would be the Marshalls. Somehow they're the only ones that seem to need a ton of eq to get sounding good. Oh yeah, and I never use the spring reverbs that come with the sims, though the Fender rack verb is pretty nice. Normally I just use REFLECT though, when reverb is important in the mix.

The Softube sims also sound very good to me, but the bare bones nature of it causes me to usually skip over it. Call me lazy, but it's a bit of a pita to have to call up a new plug in every time you want to add any type of effect and there isn't even an output gain control. When I wrote and asked about getting an output gain the customer service guy basically said, "Crank it up." That's a pretty start contrast to the dozens of suggested features IK's implemented over the years.

S-Gear is also very good. The Marshall sounds great, but I guess they're ex Marshall guys. They could probably benefit from more flexible routing and effects, but for the money it's a great sounding plug.

I passed on it as the demo tracks sounded really harsh in the high frequencies, but that could be the way the patches are set up. If I demoed every plug in that came out I'd probably not do much else, so I usually use word of mouth (KVR) and audio demos to screen out potential wastes of time and that one just didn't seem to be my cup of tea and almost no one ever mentions it.

Sadly, none of the many amp sims that I own make me play any better. I find that the better my playing, the more I like whatever sweet sonic sauce I happen to throw on it.

That said, I'm still having more fun with the Nomad Factory Signature Rock Presets (or whatever it's called) than with any other sim in recent memory. Something about it really digs in. Tweakable, but not really a lot of variety. Just sounds good.

BTW, I think I'm claiming a TM on 'sweet sonic sauce.' Possible band name.

Wagner sharp tube guitar preamp v0.6 is a wonderful thing!
Good sound for fans of metal music 80's, if you use two plug-in rack one by one.

Virtual guitar amps? That's easy. ANYTHING with recabinet 3.1

Some standouts though, the GR jump with or w/o a skreamer. Tiny terror. Love the AT rectifier with the "moller" in front. Love the GR hot solo with the skreamer (or the boss distortion!) They all sound good with recabinet.
