I have been working on projects at 48KHz and I want to change them all to 96KHz. It's easy enough to do in Cubase BUT will it lower or make higher pitches in my track? There are no vocals it's just midi?

Unless you've recorded some audio then it will make no difference whatsoever.

Why? What's the benefit you're expecting?
I ask because I see only drawbacks: larger rendered files, double CPU usage...

Are your sample libraries 96k? (I'm betting not.)

If not, you are wasting your time.

Just adding zeros to the front of a sound doesn't make it better, just bigger....
