They use anything they can get their hands on which in their view might get the job done best. It's not the gear (be it hardware or software) but HOW they use it. Explore what each knob does and the possibilities that offers, paired with some musical and production talent plus actual skills and lots of time spent doing it.

In all honesty Michael, the advice by deastman is spot on.
Though if I had to narrow your quoted producers down to at least one particular instrument, I'd probably say that they use this plug in

Don't give up with the quote. For the OP, they use their brain. Each synth have their own character and these pros understand the best way to exploit these character.
