I need a program which would record the input on the disk and save it at the same time (preferebly convert it to MP3 at the same time to). Couse recording with standard audio programs and wait half an hour then for them to save that *GB file on the disk is not an option.

most good sequencers let you do this easily.
if you have a good enough soundcard you can record from several sources to separate tracks at the same time. you can also record directly from a line-in on a normal soundcard, but you have less 'monitoring' options depending on your drivers (due to latency issues).
a lot of people new to software like this go for an old cheap copy of cubase or cubasis. this is fairly simple to use and doesn't cost much, but i strongly recommend Tracktion. Very simple to use and does everything else so well that you never need to upgrade to a 'pro' version (and it only costs £50). I swear by it and use almost no other software.

more pricy - but ableton live3 should enable you to do this too
(except for .mp3 encoding on the fly - dont know of anything that will do that)
