W10, no external software, if possible.
Youtube says I should set the stereo out as rec input, I am not given that option though.

Cables from the soundcard's audio out into the audio in on your recording hardware of choice.
Press record on the hardware, press play on the daw.

The audio out to audio in is just a physical connection that doesn't need any software.

Unless you are trying to record your song in your daw to an audio file, then you should use the daw's render / bounce option

On my RME I can choose a loopback, then choose it in DAW, rec, play something, its in the DAW.

Use Audacity.
Audio setup >Select recording device>"headphone output" or whatever you have.
You can normalize the level to 0 dB
Effect> volume and compression> Amplify
Export as MP3 or Wave as required.
